Lunch Ideas - Creating Balanced Vegetarian Meals

    The batter is already wet, Neethu. Even so if you want it a bit crispier, you could mix in a little bit of oil in the batter. I normally avoid smearing oil if I am air-frying, unless I feel that it really needs that light brushing of oil.

    Wow, looks good! I dust with a little bit of rice flour while frying to make it extra crispy.

    @Gauri03: Do you shallow fry in a tava or use air fryer like Satchi? I do not want to but one more appliance....so staying away from it.

    I fry on a tawa with 3-4 tbsp of oil. It works fine as long as the brinjal is not cut too thick. The moisture in the brinjal helps it cook if you cover for a minute while frying. I have been considering an air-fryer too, but I'm not sure I will get enough use out of it.

    (1) Jeera rice
    (2) Brinjal masala fry (local delicacy of my state, inspired by the brinjals here)
    (3) Mango and plantain fry.
    (4) Moong daal.

    I shouldn't post here, there isn't anything healthy about this lunch. I promise to do better next time. I did control portion size so all isn't lost :)

    Ira: Listen, this is not twisted, in fact this is very simple and plain.
    Shanvy: You use olive oil to make tamarind rice, what can be more twisted than that and about you.
    Ira: This is very clean and clear! Why don't we choose a veggie for next weekend and cook a dish that is a regional variation that we grew up eating.
    Shanvy: Too complicated!
    Ira: Very simple..potato ..kashmiri dum aloo, aloo methi, aloo coconut ..all regional and popular variations of that vegetable.
    Shanvy: Needs coordination.
    Ira: We have a week. All we need is one united vegetable.
    Shanvy: I will think about it.
    Ira: Why is no one considering my proposals as 'let's go' in a jiffy.
    Shanvy: Because your ideas are crazy and they also have a tail.

    I love this idea. Please don't pick aloo though. I'm not a big fan, I only substitute it for meat when I cook for the family.
