    @Iravati what is in the second thali.. some patchadi and potato fry?? Drooling.. maywe have more of your inflight thalis,.. that paneer pops out of the screen..

    Second thali

    (1) Sorrel + red chillies + green chillies make a paste, fry in virgin olive oil , mix with rice
    (2) Potato and 1 table spoon of home made tomato paste in chilly flavoured olive oil with curry leaves.
    (3) Parvel + aubergine (little) + coriander leaves ground into a pacchadi , fry in virgin olive oil, temper with caraway seeds.

    I am crazy about all kinds of flavoured olive oils, basil, chilly, so on.

    Hehe! That popping paneer has a long history. I used to hate paneer while growing up. I used to call them ”rubber cubes”.

    These days I mix paneer cubes in salt, chilly, fennel powder, mango powder and saute in oil before adding to the gravy. That way the chilly tart paneer tastes yum.

    You may not discern from the low-resolution picture but the paneer is fried paneer. If I had mentioned all these fatty details, I knew you would kick me out of this thread, so I exalted as protein and paneer. You know that I am slightly lured into fatty and nutty foods. Almond and cashew pastes have a dedicated rack in my fridge. I have started to experiment these days with spices and nuts. Grinding pepper and cashew, yuck! yum! These are the trials and travails of my cooking. I am especially fascinated by Levant, Continental and Indian spices.

    Long pepper instead of pepper corns. Katira, kamarkas, isabgol, bhardo all kinds of spices.

    @Iravati why should i kick you out. You fry in oil while satchi does it in air fryer and i fool myself with a tava and appe fan.

    I can do the cashewpaate and almond once a while but poppy seed paste had me drowsy so i don't

    Keep them coming. I make my own paneer laced with herbs or chilli makes. I toast it on a tawa as a whole slab and then cut it gives me the satisfaction of the crunch.

    And gongura!!! I love that as a patchadi, as dal or sambhar
