Hi ya everyone, good to see your menus. Was busy with work and eating out last few days. Today's menu is: BF: Wheat upma Lunch: Rice, gobi curry Dinner: Either roti or dosa with gobi curry Need some suggestions, I don't have a fridge for now and not planning to buy another one for next 3 months. So I can't store veggies. I want to add more veggies to my diet but getting veggies in morning (DH gets it when he comes back from his walk, around 8.30), cutting them after that and cooking takes a lot of time. I finish cooking bf and lunch both by morning and can start my office work around 10-10.30. I don't prefer salads much. Can you tell me how to store then and incorporate more veggies in my diet.
just made Chinese yesterday for dinner.....corn fried rice with veg Manchuria. it was yummyyyyy today planning to make gobi masala with roti...(dinner ofcourse)!
@blindpup10 --Yes new dish for me as well.I always made asparagus sambhar first time tried asparagus pallya after searching for recipe online, it came out good,DH liked it as well . @chillbreeze -- I think you can store veggies like beans,radish,carrot,beetroot,etc for 1 or 2 days without fridge.Make sure not to keep it where it is exposed to sunlight. Since your DH gets veggies everyday try using today's bought veggies for next day cooking.So this way u r just storing it for 1 day. Green vegetables better to use on same day. You can try dill leaves in green vegetables.I feel dill is easier and faster to cut, usually when I make dill pulav it hardly takes 1 hr to complete cooking. Also you can incorporate more legumes like chikpeas,green moong dal,black eyed peas,etc,all u need to do is soak it overnight and cook in morning.Like this you would have got healthy diet as well as time saving, till the time you get fridge. My menu today: Bf-Dosa with potato and green peas pallya Lunch -Rice with Runner beans and carrot sambhar Dinner--It will be same as lunch
@chillbreeze- I think @IL86 has covered most of it. Cover the veggies with a moist cloth ( not directly) Like, keep veggies under the mesh food cover and put the moist cloth on the mesh food cover or pick a cool spot in your kitchen and store your veggies there. Also, have potatoes/onions/garlic/ginger-these don't have to be kept in a refrigerator. gourds/lady's finger/ squash- max 2 days My mother used to use dry green peas- soak it overnight and it can be used it in the morning. My menu- Breakfast-coffee and dosa with mint chutney Lunch- Fried rice Dinner- My DH is planning to cook chicken marsala- chicken being thawed
