CAPSICUM-MANGO GRAVY u need: -capsicum, small one convienient to stuff or u can cut to large cubes FOR GRINDING -PEANUTS -SESAME SEEDS -GINGER GARLIC PASTE -CORIANDER LEAVES -MINT LEAVES -GREEN CHILLIES -CLOVES -CINNAMON -RED CHILLY POWDER -SALT -OIL -raw mango pieces, for enough tanginess -TURMERIC PROCEDURE: - IN A PAN ADD LITTLE OIL AND FRY ALL THE ITEMS IN FOR GRINDING , ALLOW IT TO COOL AND MAKE CHUTNEY WITH LITTLE WATER -IN A PRESSURE PAN ADD LITTLE OIL, AND PUT THE STUFFED CAPSICUM WITH CHUTNEY IN OIL , FRY FOR A WHILE AND ADD THE REMAINING CHUTNEY AND WATER FOR GRAVY AND COOK FOR A WHISTLE -WHEN PRESSURE IS GONE, COOK THE CURRY ON SLOW FLAME TILL THE OIL IS SEEN -OTHER OPTION IS ADD THE CUBED CAPSICUM TO OIL, FRY THEM FOR A WHILE AND ADD THE CHUTNEY AND WATER THEN, FOLLOW THE SAME PROCEDURE AS ABOVE THIS GRAVY GOES WELL WITH ALL FRIED RICE VARIETIES , CHAPATHI, NAAN
COCUNUT-VEG FRIED RICE u need: -basmati rice - mixed veg like potato, carrot, beans, peas -grated coconut -2/3 tsp -cloves, cinnamon, cardamom,shahi jeera, bay leaves - for seasoning -onions -green chillies - ginger garlic paste -little red chilly powder for colour -daniya powde - cilantro procedure: - soak rice for a while - add oil to a heated pan, and let all the things under seasoning fry - add onions, green chillies and cook them for a while , then add ginger garlic paste -add veg and let them cook - grind coconut with red chiily, daniya powder and add to the veg -fry for a while , then add required amount of water -let it boil , then add the rice and cook till done -garnish with cilantro
SWEET DOSA u need: -chapathi flour -required amount of sugar -elaichi powder -oil/ ghee PROCEDURE: - mix sugar, chapathi flour and elaichi powder with water. similar to dosa batter -heat pan and add ghee, pour the batter with laddle like dosa -cook till the dosa turns brown both sides and enjoy
eggless orange tutti fruity cake u need: 1. 1 ½ cup maida flour 2. 1 cup sugar powder 3. 1 teaspoon baking soda 4. 1/2 teaspoon baking powder 5. 1 ¼ cup fresh orange juice 6. 1/3 cup oil 7. 1 teaspoon grated orange zest and few tutti_fruity chunks PROCEDURE: - mix all the dry ingredients first , then the yet one's -grease a suitable pan and pur this mixture into it -bake till the knife comes out clean, when put into the cake it takes almost 40 min - let it cool and then enjoy
rajma gravy u need: - boiled rajma -chopped onions -chilies -curry leaves -chole masala -dry coconut powder - tomato puree -salt -chilly powder -daniya powder -turmeric -ginger garlic paste -oil -mustard seeds, cumin and urad dal for seasoning/ you may use bay leaves, cinnamon, cardamom,cloves for seasoning procedure: - heat oil in a pan and add the seasoning, let them splutter -add onions , chillies, when they turn translucent add turmeric, ginger garlic paste -then , add tomato puree, when the oil starts oozing add rajma cook for a while -add all the masala powders mentioned then little water for the gravy, - now add coconut powder - cook for a while till the required consistency is reached and garnish with cilantro - enjoy with rice, pulav, naan or chapathi
