    Hi Mangai,
I cut the coconut into cube pieces and store it in freezer in air tight container. I use it for a week or 10 days. Whenever I want to use,
I thaw it half hour before and grind it in mixie. Hope this will help.

    Hi Mangai,

Good to see you after a long time!:hiya

Usually, I grate the coconut using a hand grater and store it in the freezer in freezer safe ziploc bags.

And as Vidhya mentioned, we can thaw it for sometime before use. Or we can also keep it in the refrigerator part of the fridge the previous night before we use it in the morning.

    Hope this helps!

    Cheers
    Krithika

I grate it and store it in freezer ziploc bags in the freezer. I stack a couple of green chillies on either sides. I saw this tip on foodnetwork in a thai food cookery show. They said, green chillies keep the coconut fresh. It is true, the coconut remains fresh for long. I just thaw it outside for sometime before I use it.
    Hope this helps.

    Hi Mangai,

Nice to see you again dear. How are you? Me too follow the same freezing method as everyone. I grate the coconut these days using coconut grater attachment in my ultra grinder and store in freezer-safe boxes. Earlier i used to freeze in ice-cube trays so that i could take out only necessary portion to thaw. But now box i find convenient. Otherwise broken coconut doesn't last well for more than a night in the fridge.

    Deepa,

Green chillies with coconut.. must try the tip.

    Hi mangai,

    Hope u and u r family r doing gud...

coming to your query..In madras weather itself i am able to store cut coconut for more than 5 days. I dont even freeze it. I just cut them into pieces ; store in a microsafe plastic box and keep it in the fridge.

By keeping it in the freezer obviously we can keep for few extra days ; but i felt it bit dry even after thawing and bringing to room temperature.Say if we use it for some curry or veggie itz ok but for chutney and kurma and all i am not satisfied with the freshness.

(Oru chinna kelvikku romba badhil sollitana ?? Sorry)

    Cindhuja,

I don't know why but here it just gets spoilt. I am not sure from where coconuts arrive in US but in Germany we get it either from South America or 'exported' from Sri lanka. I used to buy from indian shops but now my local vegetable shop offers better coconut for better price and quality. So coming back to the original topic, may be in all the flight and transportation the coconuts loose their charm:(

i have 'lost' so many coconuts when i never managed to find time to grate them soon after breaking open. I used to wipe the broken coconut completely dry before storing in fridge so that i can grate after 2 days but the fungus would land somehow.

Whereas amma always stores broken coconut in plastic cover in fridge, in Chennai for even a week without any hint of spoil!

so there we are left with no option but to freeze them!
