I am a fulltime working mom. My office hours are from 6.30-4.30 on Monday and Wednesday and 7.00-5.00 on other 3 days. This includes commute time. DH has a considerable amount of travel and is gone 2 of 4 weeks in a month. So all cooking is me. He would help when he is here but if I rely on it, it's difficult when he is gone. So far what I have been doing is cook for a week - Cook all (3-4) curries on sunday, make rice whenever needed. alternate the curries with rice so that no one is bored. This goes on until Thursday dinner. Even though they are different curries, I am bored because I know what is in fridge already. I cook on Friday night which is good enough for friday and saturday. Morning breakfasts are bread/waffle/idli/dosa etc. We don't eat cereals because DD doesnt like them. Now, I am craving for variety of food everyday. I think DD will also appreciate to have something different everyday. Only free time I have is on Monday-Wednesday from 6-7.30. How can I incorporate daily cooking without a lot of effort? How do working moms manage?

You seem to have good process in place. What you might miss is variety .
Do you have instant pot ? Buying some tools will make cooking easier.
How about doing some variety in small quantity ? That way you can experiment how much time it will take and then see if that is something you really want it. Sometimes we feel like we need something when it actually see the amount of work involved we may settle down to what we have.

If husband is away 2 to 4 weeks in a month, and OP is cooking that frequently, she has a lot of drive, a plan, and the initiative for home-cooking already. In such situations, there'd be a great temptation to go for takeout food (indian, chinese, pizza, whatever), and easily succumb to the temptation.
In the "so that no one is bored", we know that the husband is already out, and there is the daughter (what age?), who else is in this no-one? This factor may be the reason OP thinks she may have to do differently than what she does now.

Experiment a bit with ur daughter and see what she likes as well. Don’t make any curries for a while. Try these, most freezes well:

    soups,
noodles / Pasta (make any sauce n jus boil n toss, can add veg or meat),
lasagna (Any filling, sauce, cheese, bake),
variety rice (you can make or buy paste n jus toss or even ghee n tadka n add rice),
roast chicken and vegetables (just rub masala and bake),
pie (any filling under, top with mash potato or even cheese, bake)

chilly idli, Idli upma, podi dosa, fruity pancakes, bread omlette, bread upma,

Hi girl, you seem to be loving cooking and have a great sense of duty towards your family not to speak of your very good taste for good food,...,Learn OPOS way of cooking.Just google it, subscribe to the You Tube channel and start to .With the time you prep, for bulk cooking, start cutting veggies and marinate/not like they say in that group and plan different dishes and serve, eat and enjoy.!I know, there will be questions like nutrition, life of cut veggies etc., etc., but we only 'represent' the 3 sakthis with multi hands ...:grinning: , not avatars....but limited because of the human form...so take it easy...is my humble suggestion.
