Try making cabbage poriyal wth onion. Heat oil, add mustard and urad dal. After they sputter, add 2 green chillies slit lengthwise. Saute well and add 1 big onion slit lengthwise. Saute well. Add a pinch of salt to help the onions cook better. Add cabbage and saute well. Once the cannabe has started to shrink, adjst seasoning and allow to cook. This is a very crunchy version of cabbage which is very good with rice and roti alike.
Cabbage thoran. Add grated ginger to the cabbage coconut mix and cook on low heat.Add usual mustard,red chilli flakes and curry leaves tadka. I also add a little bit of hing in the tadka. Also try not to over cook cabbage. Another good recipe is cabbage kosambari with crushed peanuts. Tastes really good with farm fresh cabbage. Dear @Thoughtful, you are indeed thoughtful! Your reply has the ability to lower anxiety level, increased by looking at availability of cabbage and my inability to use it. I will definitely try this. The most important part you mentioned, was to cook only a quarter at a time. I can do that.
I can smell the cabbage being cooked in microwave- in the bleached paper towel! Thanks for sharing an amazing recipe but I don't use the microwave, I like the oven instead. Check this out
Cabbage is my go to vegetable for weekdays or when I have guests. It’s so quick to chop and cooks in a jiffy. I usually make a quick stir fry with with very little water to keep the cabbage crunchy. Goes well with rice and dal or even with chapati.
