I add coconut milk to the masala before veggies. Same process. Just don't cook it much after adding coconut milk or it will turn into oil. If you are making coconut rice, it's a complete different process. Make rice, then add tadka, grated coconut, add rice and fry

Watch YouTube videos. Check what type of Rice are you buying can you cook that rice plain white rice fluffy in open vessel cooking. Don’t know abou clipon cooker.
Tat cardiologist is lying! Coconut has good cholesterol. But ofcourse you need to watch your portion and calories. These western people portrayed that coconut is not good for health, but now even they are behind coconut and it’s products. If you goto supermarkets you can see big jars of cold pressed coconut oil. Especially for diets like Keto they infact recommend Coconut oil /Ghee even for making coffee! I have seen Americans picking up ghee and I was shocked We in India easily get influenced by western diet and so on. But slowly westerners are realising tat Asian/Indian products are infact healthy. There are so many YouTube videos where westerners have shown how to make ghee and I was like Definitely refined oils like Sunflower, rice bran have bad cholesterol but not healthy oils like coconut oil, olive or avocado oil and ghee.

Wow didn't know that thanks. I don't let it turn to oil though. I cook the tadka masala nicely then add coconut milk mix and add veggies like Thai Curry. I use it for just a few dishes. Will be careful from now on.
Not sure if this is true. There are several contradicting research on this. Coconut has good cholestrol and a lot of healthy eating people sub butter with coconut oil. OP, Use good quality basmati rice. It doesn't matter how much ghee you use. I have made biriyani without any oil and even then the rice was not broken. I follow this recipe with oil: Fry your vegetables add salt and spices and mix well. Add the water (usually 2 cups of water for 1 cup rice, but when I use a new brand, I go with 1 3/4 water for 1 cup rice. Boil the water and add rice. Cover with lid, put the whistle on and cook for only one whistle. Take it off from the stove and let the steam go off on its on. Open it and fluff the rice carefully, make sure you get the bottom. If you mix too much the rice will break, use a spatula instead of anything steel. This worked for me everytime.
I happened to argue with a leading cardiologist in Chennai on this score. 2. I told him the southern state Kerala is huge producer & consumer of coconuts and its oil. They seemed to be healthy and their skin glisten they attribute to coconut oil massage. He responded that among various states, high percentage of fatal heart disease is in Kerala and large consumption internally and externally of this oil could be one of the reasons for it. 3. I tend to agree with @shravs3 about the false news planted by vested interests especially from western pharmaceutical companies about alleged harmful effects of coconut and cold pressed coconut oil. 4. I apply this oil on regular basis on to my head & trust my head is not filled with cholesterol bad or good. 5. However I enjoy warm Avial often with coconut oil flavour in it thanks to spouse and my late mom & Mil. God - all oils edible and inedible causes turmoil in stomach.
