Has anyone tried making chutney sandwich or toast sandwich with chutney for later? I have a potluck at work and I was thinking to make Mumbai style toast sandwich in morning for lunch potluck. I am worried if it the bread would get soggy. Is there a way to avoid the bread getting soggy?
You can try putting a good layer of butter on the bread before adding chutney. It might help keep it from getting very soggy but IMO these will taste best when fresh.
I am contemplating between toast sandwich or idli chutney now. I am in US and people here are used to eating cold sandwiches here. I was thinking to reheat them in microwave before serving, but I feel that might make the bread even more softer and might make it more soggy.
Have you thought of Dhokla’s? They are generally a big hit amongst my non-desi friends. They microwave well .
You talking about yellow dhokla or white dhokla? I have never made yellow dhokla and not sure how much time consuming it will be. We are about 30 people so I will have to make a lot of those.
A few popular Indian snacks are 1.Deep cocktail frozen potato samosas from Indian stores (they are bite sized and come in a pack of 50). You can fry 2 packets of these.They stay crispy unless you cover them when hot. 2. Medu vada or masala vada 3. Curry puffs/egg puffs/chicken puffs/pinwheel samosas can be made using store bought puff pastry sheets. 4.Spinach pakora (try vahchefs recipe super easy to make n yum). 5. Aloo toast chaat style aloo toast sandwich recipe 6. Khaman Dhokla as someone suggested, few people make sandwiches with these too. 7.Punugulu made with idli batter, is crispy on the outside and soft on the inside. 8. Paneer/chicken hariyali kebab - diced pieces are marinated in green masala and baked. 9. Stuffed mushrooms baked with the malai kebab marination. 10. we do make and carry these kinda toasted sandwiches with chtuney. They do tend to go soggy, but i find them delicious at work , coz office work does tend to make you hungry Alternatively, i find vada ( masala or medu) an excellent suggestion . Even tikkis or potato cutlets make for excellent snack, they could also be used as filling for a sandwich.
Inspired by Vahchef and combining his 2 chaat recipes I served this tasty and healthy version of corn chaat for my son’s birthday party and it was gone in minutes! Mix boiled sweet corn with chopped onions,chopped tomatoes,peeled and chopped cucumber,chopped green capsicum,green chutney (paste of mint,cilantro and Thai green chillies),salt,chilli powder,chaat masala,lemon juice,dried pitted dates chopped (replacing sweet tamarind chutney with lemon juice and dates) and roasted peanut(you can skip peanuts for allergy issues). Just before serving mix this chaat with some deep fried corn flakes (you can find the unsweetened version of raw corn flakes in Indian stores, popular used to make kaara mixtures,add more or less as per your choice) and serve immediately.
If you like to try a main course, you could try one of these one pot meals 1. vegetable moong dal kitchdi (rice, split skinned green gram, vegetables and tempered with ginger-green chili paste, hing,cumin seeds, cinnamon stick,cloves,turmeric,cumin seeds,cloves,black pepper corns,cashews in ghee-oil. 2. vahchefs street style egg biryani is very easy to make (replace egg with veggies for veg biryani). 3.
