Dosa Batter Left On The Counter..

    hello,

    if dosa batter left on the counter for 36 hours, should it be trashed ?
    or is it still ok to consume? The home temperature was at 73 Fahrenheit for the entire time.
    it is freshly prepared on sunday night, and i usually let it ferment for 12 hours outside.
    but due to some work pressure, I forgot to put it in the fridge at the correct time and it was on the counter all monday and now its tuesday morning. :(

    I noticed a greyish film on the walls above the batter and a thin crusty layer on the top of the batter.
    after i scooped everything out, rest of it looks/smells ok.

    i am guessing if it smells ok, you may use it. Even when it turns pretty sour people use it in different forms. You need to google because am limited to idli/dosa/uttapam only

    If it has been sitting out for 36 hours, sorry, but I would trash it. I assume it would have a very sour taste.

    Once it happened to me I totally forgot to put it in fridge. I put it to ferment in the night I was supposed to put in fridge in the morning forgot and left home, came back evening and realized. To my surprise it didn’t go bad.. and it’s winter here. So depends on the smell and consistency.. if it smells too bad don’t risk. I let it for 24hrs, and 36hrs seems little longer and how’s the weather like.

    What you did with the dough that you felt over fermented? Tem 23°c or 770°f is ok.
    My mom used to suggest to herDIL such dough not to be stirred from bottom to top!

    Though this thread is a decade old and truncated, yet issue is common one and i expect some more sound responses in terms of repairing the over fermented dough.

    You can use it in many scrumptuous dishes with the over fermented dosa batter. Try this!
    Mix scoop of channa flour (kadalai maavu in tamil,senaga pindi in telugu) withe fermented batter.
    Add chopped onions and chilli powder. Add little salt and a pinch of baking soda.
    Heat the oil and put it as small balls, then crispy, tasty and yummy appetizer is ready!
    Any one want to try? Prepare it and enjoy, it is my favorite.
