    @Rihana's thread on sambhar made me post this thread. I can't write like her because she is super talented.

    In my younger days I did not give importance to cooking. My mother and grandmother we're there so I did not bother to learn. My grandmother was expert in cooking,I could have learnt from her.

    My cousins were coming so I made decotion. I had seen my sis in law putting 6 spoons of coffee powder I thought for one person so accordingly put powder. Another time I tried to make some halwa with ground nut and my Bhabhi was pregnant and she could not bear the smell
    I did not know I will be married to a family where all are experts in cooking. Learnt cooking from my husband and earlier stages I used to get scared if any relatives are coming for lunch. Some how learnt to make mysore pak which is not so easy. MyhMy husband used to help. I went to my two friends house to show them how to make mysorepak. Then when I learnt to make seven cups some friends liked and asked me the recipie. In office my friends used to like stuffed brinjal, karela etc.

    Now after retirement I am better. Of late I make different dishes seeing you tube and my husband also enjoys.

    I believe in variety is the spice of life

    What is your everyday dish ? That you had perfected over the years. A special dal, subji, or some procedure that is helpful ?

    So much of indian cooking is so labor intensive. And therefore such a lot of things that can go wrong due to "operator error". Getting consistent comes over years of practice. And when we use shortcuts, it results in compromising something else, usually the taste. That was Rihana's point of having uninterrupted time to do it right, and no fast-tracking any step. Perhaps that is why you found cooking your cup of tea only after you retired, and had more time to be relaxed and focus on the cooking.

    And girls (like you) with a husband who can cook, and helps in the kitchen are lucky.

    Yes totally agree - variety is the spice of life, otherwise we get bored with regular routine food.

    Good to know that you can make good mysore pak, I love mysore pak especially the soft one made with lots of ghee.

    Nice confession, Vijima. With years of experience and yearning to master the skill, you must be a great cook now. I am tempted to try newer dishes as
    I too love variety and experiment often.

    @iyerviji
    Vijima. If you can make Mysore Pak, then you need not have any doubts about your cooking skill. You are the best cook.

    There is a saying in Tamil, "paada paada raagam..." (Raagam will be perfect the more one sings); the more we do something the better we get at it.

    :) I can imagine how the decoction would have been !
    In the early days of my marriage, my husband would say that I had my kept a quota of salt for the day, and divided it evenly among all. So one ended up too salty and another with much less salt.

    So, you are not alone Vijima. I am with you :)

    Enjoyed your very sweet write up.
