Tip For Keeping Chapati Dough Fresh In Fridge

    To keep chapati dough soft and pliable in fridge, wrap it in clingfilm, put in a container, and tuck a piece of aluminium foil over the wrapped dough.

    Wrapping in clingfilm is key. I used to just put it in a container and it would harden within a day. Using the clingfilm method the dough stays soft for about 4 days.

    Here is another cute one. I used to do this (not as good as the Cal-girl), but I needed to use a lot of dusting flour, and it got messy. This girl in video is pretty clean and uses hardly any dusting... Likely her roti dough has more oil in it.

    Hand cranked Pasta machine is sold by amazon/dot/in, flipkart and a few others. This handcrank machine would require a kitchen counter edge to mount that (it has a "C" clamp mount). In foreign, people buy such things thinking that they will use it to make pasta, but after one or two uses, these kinds of things are given away to thrift shops. And then they are sold for a very very cheap price.
    I thought that California girl's cutting of perfect round rotis with a skillet lid was cute. There is another youtube where a woman puts all the rolled out roti's in a tupperware canister, closes the lid tight, and puts in the freezer.

    I used to do this - put rolled out rotis in the freezer, with some thin plastic sheets in between. The frozen ones make reasonably good rotis, but they tend to dry out and are not as soft as the freshly rolled out ones.

    I don't think I'll ever use a pasta machine. Cooking is not soothing or relaxing or pleasing for me, I'm a reluctant cook at best :grimacing:. But I must say I once made fresh pasta from scratch (flour, eggs, salt, and water) and it was AMAZING! Can't have too much maida though because it makes me bloat.

    :roflmao: Your time is more valuable than Rs.1.65 lakhs. Even if you make rotis once a week assuming at least you spend an hour, i.e. 52 hours and over a 5 year period, it will be 260 hours.

    Moreover, when you order the Robot to make Chappatis, you can spend quality time with your family. What can be more valuable than that? :)

    I double wrap the dough with aluminum foil and keep it fridge or freeze it.

    It stays fresh for days. I think the key is to make it airtight.
