Tawa For Chapati Dosa And Rice Roti

    Hi
    Please suggest me which kind if tawa is good for dosa chapati and rice flour roti. Is there any separate tawa for dosa.please see Attached photo and what is the difference in this tawa and usual non stick tawa

    Hello OP,
    For roti please use tawa made of iron, old world style. North Indians use it, it will last forever. It increases the iron content, it rusts tough, so after cleaning has to be diried or put inverted. clean the rust off before next use.

    Use the teflon- non stick pans/ tawas minimum. Teflon is bad for health and when heated to high temperature without something in it, it is known to kill birds with its fumes. When using for rotis, the tawa does stay empty from time to time.

    Also, it is best to get rid of all non stick cookware, it is just bad. Keep one for emergency.

    Use ceramic coated pan, tawa, if possible, or go old school.

    Stainless Steel is good too, the old school type iron kadai with years of oil- may be I do not know about it.

    The left one is a regular tawa and the right one is a pan with a rim.

    IMO, a tawa works best for chapati, a large griddle for dosa and a pan for pancakes. But any of these will get the job done.

    I agree with @hermitcrab. Avoid teflon if you can. Iron is a better choice.

    i live in US. I use cast iron tawa (US style- flat)from the beginning. If possible, i would have brought cast iron from India with is little deep like pic above.
    Iron tawa is v hard to clean and v heavy for me. If falls, it breaks counters or toes but still I stick with iron mostly by habit and preference. Back in India( north), we all use Iron. We do not make dosa/egg on it as it won't come out good.

    Can someone tell where we can get iron tawa in Bangalore? Also cooking pots as like in old style to cook rice ,dal etc where they would be available? How to identify them r they cooking used? Please

    you ll find those in chickpet @ wholesale price, u need to enquire in steel shops.

    pl make a check list b4 visiting to those shops. most of the shops have cooking pots, iron tawa.

    Hawkins brand also have good tawas either for roti/dosa/chappati. but are pricey n ve better quality than prestige.
