Hi, When i bake chicken in the oven, water oozes from chicken and the chicken gets steamed/boiled with that water in the pan and it doesn't get that roasted look. How do u bake chicken for chicken tikka/chicken tandoori type of recipes. Like for chicken appetizer. help pls. Thanks!
I use a roasting pan with a rack. The moisture drips off, and you can collect the juices if you want to use them for cooking/gravy etc.
Thanks Malstrom for the quick reply. how big is ur roasting pan? is it like those lasagna pans? deep pan with v shape rack? do u use those pans for any other dishes? or only for roasting chicken.
What temp are you using? You should preheat the oven to 375 and then put in the chicken. I just put the chicken on a pizza pan...no need for anything special although metal will work better than glass. Leave it UNTOUCHED for at least a half hour until the skin is crispy. One thing that works well for oven cooked chicken is that Shan Chicken Broast Masala. I put it in a bag and then put in the pieces and shake to coat and then bake it. If you are going for tandoori you will need even hotter temp like 400 or 425. Be sure to preheat the oven. If put the pieces on skewers and then put them over a baking pan so they don't touch the bottom you will get the more tandoori finish on your meat.
In the summer they sell this type of thing for barbeque grills but it would be helpful for cooking tandoor meats in the oven (put it on a tray). I have seen them at Walmart and TJMaxx. You won't find it cheaply this time year.

Tina i do preheat and cook in 375 but so much water comes from chicken, sometimes inbetween i take the pan out and strain the water as much as i can. this time i got laskhmi brand tandoori paste which was awesome. the kids loved it. i will try to look for this grill in summer. no hurry can wait and buy. Malstrom i have seen these pans during thanksgiving time, i didnt want to buy as no space, so wanted to first try with whatever i have.
One way is to simulate a rack pan by putting in the bottom of the pan onions (and carrots or other veggies) as a "rack". Usually chicken do not release much juices. Try to put it in first with high heat and then lower it to baking temperature.
