    When we hear about "ways" of other states/countries, we definitely are surprised and shocked. The point is how much are we ready to accept it and not derogate the same.

    There is always a ratio of oil to rice that is to be followed while mixing them. It doesnt mean that oil would be dripping from it. Castor oil(aamudam, in telugu) is an effective moth/germ repellant and hence used while storing. The same storage containers would be used as we do in our areas; those aluminium/steel containers. Very effective, I must say. Remember, this whole process is done when storing in quintals not merely 10-15kgs.
    And as far as washing before cooking is concerned, they are washed the same way as we do for regular rice/dals. Only, it could take a few more mins to rinse off the oil. But usually, that is not of much concern, coz castor oil is edible. And in fact, produces heat to the body, which is acceptable for the cold weathers there.

    And wheat being the staple food of Gujarat, rice is prepared in very little quantities every day. There could be few items like khichidi, that is prepared regularly, yet the rice intake is very less compared to our 4 southern Indian states. So, they have, devised this technique to store rice/dal for a longer period of time.

    The jute bags that are used to store, have their own shelf life too. But the bags are not moth repellants.

    you can go through this link to know about cheese http://http://en.wikipedia.org/wiki/Cheese . And in you want to make cheese that is paneer in home means, you can follow the following :)

    take 1 litter milk in a pan and heat it, when it reaches the boiling point, add 1table spoon full of lemon juice in it.
    soon milk will turns into curds and whey.
    That is some solids and water. Let it boil for 2 more minutes and stir well.
    Now pour it on a muslin cloth and drain it.
    Just squeeze the solid particles and remove all the water from it.
    Put a pinch of salt and mix with the solid.
    This will help to remove more water from the 'panner'
    again press and remove the excess water from the solid.
    Now you can shape the 'panner' i.e. cheese as per your requirement.
    keep it in the fridge.
