How to make BUTTER at home!

    Hi All,

    Can anyone let me know how to make butter at home from Malai...

    I heard from someone that we need to first set malai like dahi by putting some curd in it then making the butter in mixer, but I was unable to even imagine how is that possible...

    Has anyone ever tried making butter at home? If yes, please share your recipe and useful tips!

    I used to save the milk cream daily basis in the fridge.
    On saturday night, add little thick curd and leave it out overnight. One sunday afternoon, put in the mixer and use start/stop button for 5 times and open and see the butter will be floating on taop and like that process collect the butter.

    Keep storing malai in the fridge for few days till you get enough. It will also get a bit sour in the process like curds ,then churn it by adding cold water.
    The mixer will get messy of course but you will get butter and whey or 'chach'.

    hi ,
    by butter you mean ghee or clarified butter.
    i make ghee at home as i prefer my child to eat homemade than outside product .
    i usually boil milk in the morning and then refrigerate it, in the evening or next day morning you will have thicker malai collect this with spoon in a bowl.collect all the malai in a bowl and keep it in the freezer for a month.
    once when you have collected a whole bowl defrost it then mix curd and keep it overnight.
    next morning whisk it nicely this is makhan or white butter.
    if you are referring to this butter then stop at this stage .
    for ghee transfer the mixture to a big kadai and put on the gas.keep stirring in between so it wont stick at the bottom .this will take an hour atleast.once when the ghee separates and the after product becomes like small rava your ghee is ready.use an aluminium kadai for making ghee as steel will have burnt product stuck.learned the hard way.hope this helps

    you dont need to add curd and all. you can collect malai everyday in one container, depending on how much you collect you can make butter once or twice a week.
    the malai you have collected you can beat it by hand with a big spoon or by using a hand blender, if you are a punjabi , im supposing by sethi:) you know what is madhani? you can beat malai by madhani and after sometime the butter will separate. somtimes you need to add little cold water to separate butter, just beat little and add some chilled water. slowly butter will separate. you can also make it in food processor if you have , it comes really good !
    actually i feel we punjabi's make it like this way but in my in laws home they make curd and then make butter , i find it cumbersome !
    i make butter every weekend like this , here i have hand blender and it takes five min to make butter.

    You can even put the collected malai in a bottle, close it tightly and shake it for sometime, the butter will get separated easily. No mess or no cleaning up sticky vessels. Take a good bottle witha wide mouth and a tight en cap. Open in between to avoid the bottle opening up when shaking.

    Can anyone tell which blade should be used for churning butter in food processor? How to use the whipping blade?

    Yeah, I too prepare butter like this, no need to add curd but mix it in a mixer or blender and slowly slowly add water, I usually put normal room temperature water and u'll find your butter getting separeated from buttermilk.

    Many people use this buttermilk for making an Atta dough or just for drinking with salt or sugar as per the choice.

    hridhya you can use whipping blade, in the food processor at my mom's place we have a attachment for making butter also. its by bajaj, but i would make it by whipping blade also.
