    hey blessedbabydust...

i like the menu; i might just add a starter- maybe something veg, like cauliflower fritters, or veg pakodas and add a green salad.

When I have guests and the menu includes masala khanna, I always serve some lemon ginger drink.

    Happy cooking :)

Usually a non vegetarian doesn't eat much of the veggie dishes when there is a nonveg dish.So I suggest you focus on the nonveg dishes and keep the veg menu simple unless you also have another guest who is pure vegetarian.

Here is the menu I prepared for a guest who payed a visit recently.

Starters - chicken 65 with lemon wedges and onion rings

    Main course:
    Rice
    - white rice
Curry - Andhra fish curry, aloo fry
Dal - Tomato methi leaves dal
    Chutney - Coriander leaves chutney
    Curds - plain curds
Desert - Saffron kulfi (easy instant kind)

I prepared the fish curry the day before as it tastes better the next day and was easy this way.As we had a male guest, we also served beer with chicken 65.

    Now for the recipes:

1.I followed vahchefs fish curry recipe, search for "vahchef fish curry" in youtube and you will find it.

2.I followed saffron kulfi recipe from a food blog called enjoyindianfood.

3.Aloo fry - Peel, chop the potatoes into small cubes & immediately add to water to prevent them from blackening.Heat oil, add mustard, urad dal, cumin seeds & let them crackle.Add curry leaves, onions, green chillies, garlic. Cover & fry on a medium flame till the onions are nicely transparent.Add the potatoes & mix well. Fry for a while (do not cover) till nicely cooked & fried till light brown. Add salt, chilli powder, turmeric powder & fry for a min.Serve.

4.Tomato methi leaves dal - Pressure cook toor dal with water, turmeric, few drops of oil,few chopped onions, few green chillies till soft.Remove and let cool, mash with tamarind juice and keep aside.Mix few fresh methi leaves with salt and keep aside for 30 mins.Squeeze water from the leaves, this removes the bitterness, also wash off the salt and squeeze again.Fry the methi leaves in little oil and keep aside.Heat little oil in a pan,add red dried chillies, mustard seeds, cumin seeds, curry leaves, hing, crushed garlic and fry.Add chopped tomatoes, salt, chilli powder, turmeric and fry till soft with the lid covered. Now add the fried methi leaves and the mashed dal and cook for 15 mins on low heat.Serve hot.

If you want to prepare a fancy menu and don't mind the effort, here is another.I prepared this for my sons birthday.

    Starters - Fish fingers

    Main course:
    Rice/bread
    - Chicken Pulav, white rice, plain paratha, veg soft noodles
Curry - Chicken Kurma, Chilli chicken
Dal - Plain dal with ghee
    Rasam - Pepper rasam
    Pachadi - Brinjal chutney
    Curds - raita, plain curds
    Desert - Ravva ladoo

    Now for the recipes,

1.I followed vahchefs fish fingers recipe, you can find it in youtube.
2.I sent a recipe for chicken pulao to vahchef and he made a video of it.You can find it under the name andhra chicken pulao in youtube.
3.I also followed vahchefs chilli chicken, you will find this in youtube.
4.For the parata, I used vahchefs latcha parata recipe (without the gunpowder), you will find this too in youtube.
5.I followed the remaining recipes from sailusfood website.

All these recipes, tastes good.I suggest you prepare this only if you have lots of time in hand.

Hope this helps and good luck.

Some of the snacks that you could try are
    1. Fish fingers - Marinated fish fingers are coated in egg and breadcrumbs and deep fried.Vahchefs recipe is good.

3.Keema cutlets - you could try with chicken or mutton keema & follow vahchefs keema mutti recipe.
4.Chicken pakodi - You could marinate chicken with salt, chilli powder, garam masala powder, ginger garlic paste, egg, cornflour, maida, besan, little curds and deep fry them.
5.Fish,chicken,mutton kababs - you can look for these kababs in vahchefs youtube page.

9.Lukhmi - square shaped keema samosa
10.Nargisi kabab - Boiled egg coated wrapped in keema curry, dipped in egg, rolled in breadcrumbs and deep fried. Also called scotch eggs.Vahchef had made nargisi kofta curry, you could add them to a curry or eat as a snack.

12.Apollo fish - cut the fish into strips or cubical pieces. Marinate with chilli powder ginger-garlic paste, salt, coriander and turmeric powders, rice flour and cornflour. Deep-fry until crisp. Then toss in a pan using chilli powder, lemon juice and curry leaves.
13.Pizza - If you are good at baking pizza, you can try some indian style pizza like chicken tikka pizza, chicken tandoori pizza.
14.Chicken/mutton masala vada - I have seen this on tv, they mixed regular channa dal mixture(for masala vada) with chicken/mutton keema and made vadas.Never tried it but sounds good.
15.Mushroom - you could make lots of snacks with this if you are a mushroom lover. Some of them are mushroom pakodi, mushroom cutlet, mushroom balls, mushrooms are high in protein & gives the nonveg taste.
16.Wontons - You could try veg/chicken wontons. They like very tiny spring rolls with very little filling, they are wrapped differently. You could check them in the web & learn to wrap them using your own filling.Tastes good with hot garlic sauce.

Coriander chicken - vahchefs recipe is good.
kadai chicken,chicken/mutton kolapuri are available on the web.
Shezwaun noodles/shezwaun fried rice - This is more spicy than the regular soft noodles and fried rice, it tastes good. You can look for it in an indian food blog.

Lovely ideas...my mouth is watering. Am I invited???
    a
Anyway, my quick menu always includes the following...
    * SNACKS - I usually serve two starters so that I do not have to serve jusnk like chips etc. My favourrite starters are samosa and hariyali tikki for veg and in non-veg, its mostly chicken pakoda, mince samosas/puffs
    * MAIN COURSE - I avoid dal as its very common, so I make a curry either curd or besan or tomato. In rice, its jeera rice, veg pulao or just steamed rice. My non-veg choice is usually prawn/fish curry. chicken in any thick gravy (I like palak gravy as its different from the regular red gravies) and keema.
*BREADS - It is mostly methi parathas or plain chapatis or sometimes pita bread if available
    * DESSERTS - The choice is home-made kulfi or ice-cream sometimes served with gulab jamun or carrot halwa or chocolate cake or it could be the all-time favourite Caramel Pudding

I choose from the above usually and plan a menu.

I hope you have a great party!!
